Kiritsuke Gyuto 210mm OHS Sakai Kikumori

Meat, fish, vegetables, and detailed tasks such as slicing onions into thin pieces or trimming vegetables – the Kiritsuke Gyuto OHS Sakai Kikumori is ideal for most kitchen tasks. It is a functional combination of traditional elements of Japanese geometry with modern metallurgy. The knife uses a three-layer San Mai construction with a core of SG2 powdered stainless steel and a Damascus pattern. SG2 steel achieves a high hardness and retains its edge for a long time, even with regular use. The knife’s specific profile features a gently rounded edge which, in addition to push and pull cutting, also allows for a rocking technique.

Materials and maintenance

The blade core is made of SG2 powdered stainless steel, which achieves a high hardness while retaining toughness. The octagonal wa handle made of oak wood fits comfortably in the palm and naturally orients the edge perpendicular to the ingredient.


Wash the knife by hand only, dry it immediately after use, and store it in a dry place.

Good to know

Use the knife on a cutting board made of wood or another material that is gentle on the edge. It is not intended for cutting bones, pits, shells, hard woody stems, or frozen foods. Do not use it for prying or other lateral loading of the blade.


Do not wash the knife in a dishwasher or use a rotary electric sharpener. Keep it out of the reach of children and store it so that the blade is protected from damage and unintended contact.
