Detailed information

Product detailed description

Nakiri 165mm OHS Sakai Kikumori

Nakiri represents a specialized profile in Japanese cuisine, intended primarily for fast and precise work with vegetables. It is precisely with its tall rectangular blade that the accuracy of a perpendicular cut, the clean slicing, and natural control over every movement are most apparent. The Nakiri OHS Sakai Kikumori uses a three-layer San Mai construction with a core made of SG2 powdered stainless steel and a Damascus pattern. This steel achieves high hardness and retains its edge for a long time, even with regular use. The taller blade provides secure support for the knuckles, while the balance, with the center of gravity shifted slightly forward, naturally supports a smooth cut without unnecessary effort.

Materials and maintenance

The blade core is made of SG2 powdered stainless steel, which achieves high hardness while retaining toughness. The octagonal wa handle made of oak wood fits comfortably in the palm and naturally orients the edge perpendicular to the ingredient.

Wash the knife only by hand, dry it immediately after use, and store it in a dry place.

Good to know

Use the knife on a cutting board made of wood or another material that is gentle on the edge. It is not intended for cutting bones, pits, shells, hard woody stems, or frozen food. Do not use it for prying or other lateral loading of the blade.

Do not wash the knife in a dishwasher or use a rotary electric sharpener. Keep it out of the reach of children and store it so that the blade is protected from damage and unintended contact.
