Suehiro GS Synthetic Whetstone

The Gokumyo GS series represents stones suitable for regular and daily maintenance of knives and other tools. These are high-quality and easy-to-use stones with a universal grit range. The stones are characterized by a solid and smooth structure that almost does not discolor or wear down. Gokumyo stones have excellent grinding performance and smooth feedback. At the beginning of use, you might feel like you are sharpening with a higher grit than you expected. The high density of the whetstone offers not only sharpening speed but also slow stone consumption, thereby ensuring long lifespan.

Suehiro is a renowned Japanese brand specializing in the production of synthetic whetstones. The company was founded by Kenkichi Okumura in 1967 and is headquartered in the Niigata region. Suehiro has gained a reputation by studying natural sharpening stones and developing synthetic alternatives that not only meet the performance of natural stones but even exceed it in some cases.

Note: A small diamond stone #1000 for maintaining the surface of the whetstone after each use is included in the package. 

Maintenance

To keep the whetstone in the best condition, it needs regular cleaning, thorough drying before storage, leveling out any irregularities continuously, and proper storage. Store the whetstone in a place where it cannot be damaged. Since it is dense and porous, impacts can destroy the whetstone, and the same applies to dropping it. All water stones also need regular leveling. For regular maintenance, the included small diamond stone can be used. For more thorough leveling, we recommend purchasing a larger levelling stone.

Operating Procedure

This well-processed whetstone has a dense concentration of very fine air pockets and can be used immediately after slight moistening.
1. Before use, either briefly immerse the whetstone in water or moisten its surface by hand and then start sharpening.
2. The stone must be secured before sharpening, ideally in a non-slip holder.
3. Sharpen the selected tool on the stone, maintaining the correct angle of the sharpened tool.
4. Wash and dry the tool.
5. To maintain the stone's sharpening ability, clean the whetstone with water and restore its surface with the flattening stone included in the package after each use.
6. Dry the stone with a paper towel, and fully air dry before storage. 

Grit

The stones are labeled with JIS numbers (Japanese classification for grit). The lower the number, the coarser the stone. 

Variants:
Gokumyo GS series stones are medium grit stones suitable for general sharpening and can be used for various knives - from stainless steel knives to carbon blades. Also available for sharpening carpentry, woodworking, and other tools.
#600 (Medium Whetstone grit): Grit 600 is very versatile and grinds somewhat faster than the finer "medium grit" stones (1000, 1200, 1500). It is therefore great for repairing dull and slightly damaged blades.
#1000 (Pre-final Medium Whetstone grit): Grit 1000 is a great universal grit, ideal for daily sharpening and also for anyone just learning to sharpen blades.
#1500 (Finishing Whetstone grit): Grit 1500 is ideal for regular sharpening and maintenance of knives that are already in good condition.
