Most home cooking usually revolves around one main knife. Santoku embodies this most frequently used tool in the kitchen and, thanks to its versatile profile with a straight edge and gently raised tip, handles the preparation of vegetables, meat and herbs. The Santoku 165mm NDS Sakai Kikumori features a three-layer San Mai construction with a core of Swedish Sandvik 19C27 stainless steel, a Damascus cladding and a hand-hammered Tsuchime finish. Sandvik steel is durable and easy to sharpen, while the hammered surface helps reduce food sticking.

Materials and maintenance

The blade core made of Swedish Sandvik 19C27 stainless steel is a pure material offering corrosion resistance, long edge retention and ease of sharpening. The octagonal wa handle made of oak wood fits comfortably in the palm and naturally positions the edge perpendicular to the ingredient.


Wash the knife by hand only, dry it immediately after use, and store it in a dry place.

Good to know

Use the knife on a cutting board made of wood or another material that is gentle on the edge. It is not intended for cutting bones, pits, shells, hard woody stems, or frozen foods. Do not use it for prying or other lateral loading of the blade.


Do not wash the knife in a dishwasher or use a rotary electric sharpener. Keep it out of the reach of children and store it so that the blade is protected from damage and unintended contact.
