Japanese Santoku Knife NDV 165 Sakai Kikumori

The Santoku NDV from Sakai Kikumori is a hand-forged knife from Japan, known for its amazing sharpness. This kitchen tool is the result of the work of the best craftsmen, who carefully oversee every step of production, from forging to sharpening. The name Santoku means "three virtues", which refers to its versatility in cutting meat, fish, and vegetables. The knife has a short blade with a wide profile and rounded tip, ensuring better maneuverability and making it ideal for beginners. The NDV model features a blade made of VG10 stainless steel with a Damascus cladding. The Damascus pattern, along with the hand-hammered Tsuchime finish, gives the knife a distinctive appearance.

Material

The blade is made of VG10 stainless steel with high carbon content. VG10 is a Japanese stainless steel, considered one of the best stainless steels for knife production. Thanks to its chemical composition, it combines the benefits of carbon and stainless steel, as it can be very sharp, has great edge retention, is relatively easy to sharpen, and has excellent corrosion resistance. Oak wood is used for the handle.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves:
Wash knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge.
The blade of this knife is made of stainless steel and therefore does not require as much care. Nonetheless, it's important to keep the blade clean and dry after use. To restore its appearance, both the blade and the handle can be oiled - preferably with linseed or camellia oil.
Do not use the knife for prying, cutting, or chopping frozen products or hard materials such as bones, pumpkins, etc. The blade can chip or break.
Use a quality wooden cutting board. Store knives in a dry place to prevent steel oxidation.
