Product detailed description

Gyuto 210mm Gen Shizu Hamono

For preparing meat and larger ingredients, you will appreciate a blade with sufficient length and precise control. The Gen Shizu Hamono Gyuto features a blade with a Japanese VG10 stainless steel core laminated with softer stainless steel, finished with a Damascus pattern and black Kurouchi coating. The distinctive hand-hammering on the upper part of the blade helps slightly prevent ingredients from sticking during cutting. Thanks to its slim profile and rounded edge, it makes clean cuts without tearing fibers, while the sharp tip and versatile 210 mm length make detailed work and most everyday tasks easier.

About the manufacturer

The Japanese family workshop Shizu Hamono operates in Seki City, Gifu Prefecture. Much like in Sakai, the knifemaking tradition in Seki relies on a specialized division of labor among blacksmiths, sharpeners, and other craftsmen. Within this regional ecosystem, Shizu Hamono combines traditional techniques with in-house material research, blending authentic aesthetics with low-maintenance functionality. The workshop focuses on practical knives for daily kitchen use, as shown in series such as Gen, Yuri, Yamato, and Morinoki.

Materials and maintenance

The blade core is made of VG10 stainless steel with a 33-layer cladding of stainless Damascus steel. The blade features a dark Kurouchi finish and a hand-hammered Tsuchime pattern. The laminated pakkawood handle resists moisture and wear. The handle profile has the traditional chestnut shape (D-shape), with a black lacquered end and a metal transition at the joint with the blade. The shape is primarily intended for right-handed users, but the knife can also be held in the left hand.

Wash the knife by hand only, dry it immediately after use, and store it in a dry place.

Good to know

Use the knife on a cutting board made of wood or another material that is gentle on the edge. It is not intended for cutting bones, pits, shells, hard woody stems, or frozen foods. Do not use it for prying or any other lateral stress on the blade.

Do not wash the knife in a dishwasher or use a rotary electric sharpener. Keep it out of the reach of children and store it so that the blade is protected from damage and unintended contact.

SHIZU-HAMONO_BRAND-SLIM
