Yuri Santoku 190 Shizu Hamono

The Yuri Santoku Japanese knife by Shizu Hamono is an elegant and precisely crafted kitchen tool. It stands out for its light weight and offers easy comfortable handling. This is achieved thanks to a sharp thin stainless steel blade and a comfortable oval handle made of stabilized wood finished to a silky smooth surface. Santoku means “three virtues” referring either to meat fish and vegetables or to slicing chopping and scooping. It is a versatile Japanese knife ideal for everyday cooking. It features a short to medium length blade with a wide profile a straight or only slightly curved edge and a rounded tip. This design favors a chopping motion rather than a rocking one with more vertical movement. Compared to a Gyuto knife it is usually shorter which provides better control and makes it an ideal choice even for beginners. The Yuri series designed by an all female team of the brand focuses on lightweight and thin knives that are ideal for everyday kitchen use. The knives in this series feature the thinnest blades in the entire Shizu Hamono catalog allowing for sharp precise cuts with minimal effort.

Shizu Hamono is a family business established in 1980, building on the rich tradition of blade crafting in the city of Seki, in Japan's Gifu Prefecture. With pride for its heritage, it bears a name inspired by master craftsman Saburo Sizu from the Edo period. Material

The blade is made from AUS-8 stainless steel with higher carbon content, coated with two layers of SUS1A-1 stainless steel, and crafted using the San-mai technique. Japanese steel AUS-8 is sturdy, durable, and easy to sharpen.
The handle is made from stabilized Pakkawood - a composite material made of layers of wood that are impregnated with resin and then pressed under high pressure. Pakkawood is highly resistant to heat, moisture, warping, and other common issues that can occur with natural hardwood.

Note: The knife is delivered in beautiful packaging in a paulownia wood box. 

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves: Wash the knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge.
The blade of this knife is made from stainless steel and therefore requires less care. However, it is important to keep the blade clean and dry after use. To restore appearance, both the blade and handle can be oiled - preferably with linseed or camellia oil.

Regularly sharpen the knife on a whetstone, but remember that Japanese knives have a different edge angle and require special and gentler sharpening stones. Use a quality wooden cutting board. Store the knives in a dry place to prevent oxidation of the steel. Do not use for cutting or chopping frozen products or bones. The blade may chip or break.
