Product detailed description
Yuri Nakiri 175 Shizu Hamono
The Japanese knife Yuri Nakiri from Shizu Hamono is an elegant and precisely crafted kitchen tool. It stands out for its lightness and offers easy and comfortable use. This is achieved thanks to the sharp and thin blade made of stainless steel and the comfortable oval handle made of stabilized wood, which is polished to a silky smooth finish. The Nakiri is an ideal knife for slicing fruit and vegetables. It has a characteristic rectangular blade shape with a straight edge and flat profile, making it ideal for vertical chopping of vegetables without a rocking motion. It has a straight back and edge, without a pronounced tip, allowing full contact with the board along the entire length of the cut. The blade is usually thin and wide, easily penetrating even dense vegetables while also serving as a scoop for transferring chopped ingredients. For safe, precise, and quick work, the blade height allows the hand’s knuckles to be used as a guide while cutting. It is particularly ideal for clean, uniform cuts.
The Yuri series, designed by the brand’s female team, focuses on light and thin knives, which are ideal for everyday kitchen use. Knives from this series have the thinnest blades in the entire Shizu Hamono catalog, allowing for sharp and precise cuts with minimal effort.

Manufacturer
Shizu Hamono is a family company founded in 1980, continuing the rich tradition of knife-making craft in the city of Seki in Japan's Gifu Prefecture. Proud of its heritage, it bears a name inspired by the master craftsman Saburo Sizu from the Edo period. At Shizu, they are committed to producing knives that meet the highest standards of quality and craftsmanship. Their original series Yuri, Yamato, and Morinoki are designed with an emphasis on ease of use and comfort during work. They put great effort into production and believe that their knives help people fully enjoy cooking.
Material
The blade is made of high-carbon stainless steel AUS-8, coated with two layers of stainless steel SUS1A-1, and constructed using the San-mai technique. Japanese steel AUS-8 is tough, durable, and easy to sharpen.
The handle is made of stabilized Pakkawood – a composite material consisting of wood layers impregnated with resin and then compressed under high pressure. Pakkawood is highly resistant to heat, moisture, warping, and other common issues that can occur with natural hardwood.
Note: The knife comes in beautiful packaging in a paulownia wood box.
Maintenance
If you want to keep your Japanese knives in perfect condition, here are a few must-haves: Wash the knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge.
This knife blade is made of stainless steel and thus requires less care. Still, it is important to keep the blade clean and dry after use. To restore its appearance, both the blade and handle can be oiled – preferably with linseed or camellia oil.
Regularly sharpen the knife on a whetstone, but remember that Japanese knives have a different edge angle and therefore require special and gentler whetstones. Use a quality wooden cutting board. Store knives in a dry place to prevent oxidation of the steel. Do not use for cutting or chopping frozen products or bones. The blade may chip or break.
