Kiritsuke Santoku 180mm KIKUZUKI Kuro Sakai Kikumori

The combination of the versatile Santoku shape with the precisely beveled Kiritsuke tip creates a knife capable of handling most tasks on the cutting board. The Kiritsuke Santoku from the high-end KIKUZUKI series is hand-forged in the workshop of Yoshikazu Tanaka. The three-layer construction with a Shirogami #2 carbon steel core achieves a high level of sharpness and offers excellent feedback during sharpening. The more substantial spine and heavier blade give cutting a stable, confident rhythm, while the beveled tip maintains precision during detailed work. Combined with the lightweight magnolia handle, the balance shifts significantly forward, allowing the knife to pass through ingredients under its own weight, without the need for pressure. The dark, coarsely finished Kurouchi surface partially protects the blade against corrosion and transitions smoothly toward the edge into a matte Kasumi finish.

Materials and maintenance

The Shirogami #2 carbon steel core achieves a high level of sharpness and responds very well to sharpening on water stones. Precise forging and hardening using pine charcoal improve its edge retention and toughness. The outer layers of soft iron protect the hard core from mechanical damage. During use, the blade naturally reacts with food and develops a patina, which is a common characteristic of carbon steel. The handle is made of magnolia wood and finished with a buffalo horn ferrule.


Wash the knife by hand only, dry it immediately after use, and store it in a dry place. Regularly treat the blade with a thin layer of oil suitable for maintaining kitchen knives, such as camellia oil

Good to know

Use the knife on a cutting board made of wood or another material that is gentle on the edge. It is not intended for cutting bones, pits, shells, hard woody stems, or frozen foods. Do not use it for prying or other lateral loading of the blade.


Do not wash the knife in a dishwasher or use a rotary electric sharpener. Keep it out of the reach of children and store it so that the blade is protected from damage and unintended contact.


The knife is sharp from the factory and ready for immediate use. However, if you are skilled at sharpening on fine water stones, you can achieve even greater sharpness from the Shirogami steel with your own final finishing.
