The Japanese knife Kiritsuke Santoku NAMI by Sakai Kikumori is a quality kitchen tool, hand-forged in the city of Sakai. It offers amazing sharpness, cultivated by the best craftsmen, from forging to sharpening. Kiritsuke Santoku is a combination of two traditional Japanese knives that combines the best of both – the technical precision of Kiritsuke with the versatility and comfort of Santoku. It has a very sharp tip in the reverse tanto shape, allowing for precise cuts, for example when carving fruits and vegetables, filleting meat, or slicing garlic and herbs. Compared to a regular Santoku, it requires a bit more skill. The NAMI model features a blade made of stainless steel AUS-10, which has excellent edge retention, toughness, corrosion resistance, and wear resistance. The Damascus pattern gives the knife an unmistakable appearance.

Material

The blade core is made from Japanese stainless steel AUS-10 with an increased carbon content. The substantial amount of this element guarantees easy sharpening and a hardness of 58-60 HRC. AUS-10 has excellent edge retention, toughness, and corrosion and wear resistance. Knives made from this steel sharpen well and achieve excellent sharpness. The core is clad with a Damascus finish, which consists of several layers of different types of steel that create a visually striking pattern.
The traditional octagonal handle is made from oak or ebony wood.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves: Wash knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge.
The blade of this knife is made of stainless steel and therefore requires less maintenance. However, it is essential to keep the blade clean and dry after use. To restore the appearance, the blade and handle can be oiled - preferably with linseed or camellia oil.
Regularly sharpen the knife on a whetstone, but remember that Japanese knives have a different edge angle and therefore require special and finer whetstones. Use a quality wooden cutting board. Store knives in a dry place to prevent steel oxidation. Do not use for cutting or chopping frozen products or bones. The blade can chip or break.
