The Japanese knife Sujihiki NAMI by Sakai Kikumori is a high-quality kitchen tool, hand-forged in the city of Sakai. It offers amazing sharpness, cultivated by the finest craftsmen, from forging to sharpening. Sujihiki is a Japanese slicing knife with a double-edged blade, designed for cutting thin slices of meat, not only in sushi and sashimi preparation. Its long and thin blade is intended for slicing ingredients with a single motion. Thanks to its needle-like shape, it glides over proteins with minimal resistance, preserving the natural texture and taste of the meat. The NAMI model features a blade made of stainless steel AUS-10, which offers excellent edge retention, toughness, corrosion resistance, and wear resistance. The Damascus pattern gives the knife a unique appearance.

Material

The blade core is made from Japanese stainless steel AUS-10 with increased carbon content. This significant amount of carbon ensures easy sharpening and a hardness of 58-60 HRC. AUS-10 has excellent edge retention, toughness, corrosion resistance, and wear resistance. Knives made from this steel sharpen very well and achieve an excellent edge. The core is clad with a Damascus finish, which means several layers of different types of steel create a visually impactful pattern.
The traditional octagonal handle is made of oak.

Maintenance

To keep your Japanese knives in perfect condition, here are some must-haves: Wash the knives by hand. Wipe dry with a cloth. Avoid the dishwasher, as it may damage the edge. The blade of this knife is made of stainless steel, so it requires less maintenance. However, it is important to keep the blade clean and dry after use. To restore appearance, the blade and handle can be oiled - preferably with linseed or camellia oil.
Regularly sharpen the knife on a whetstone, but remember that Japanese knives have a different edge angle and thus require special and finer whetstones. You can use, for example, a Japanese whetstone KING or Suehiro. Use a quality wooden cutting board for slicing. Store knives in a dry place to prevent steel oxidation. Do not use for cutting or chopping frozen products or bones, as the blade may chip or crack.
