The Japanese Knife Gyuto NAMI from Sakai Kikumori is hand-forged in the city of Sakai. This kitchen tool excels with an amazing sharpness, which is cultivated by the best craftsmen throughout the entire production process, from forging to sharpening. Gyuto is a universal knife with a longer and narrower blade than the Santoku. It is ideal for slicing meat, fish, vegetables, and herbs. Thanks to its length, it allows long strokes when cutting meat, while the curved blade is suitable for the rocking technique. The NAMI model has a blade made of AUS-10 stainless steel, which has excellent edge retention, toughness, and resistance to corrosion and wear. The Damascus pattern gives the knife a distinctive appearance. Suitable for both professional and home chefs.

Material

The core of the blade is made of Japanese AUS-10 stainless steel with increased carbon content. A significant amount of this element ensures easy sharpening and hardness of 58-60 HRC. AUS-10 has excellent edge retention, toughness, resistance to corrosion, and wear. Knives made of this steel are very well sharpened and achieve excellent sharpness. The core is clad with a Damascus finish, which means several layers of different types of steel, creating a visually impressive pattern.
The traditional octagonal handle is made of oak wood, available in natural and blackened variants.

Maintenance

To keep your Japanese knives in perfect condition, here are a few must-haves: Wash the knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can cause damage to the edge.
The blade of this knife is made of stainless steel, so it doesn't require much care. However, keeping the blade clean and dry after use is essential. To restore the appearance, you can oil the blade and handle - preferably with linseed or camellia oil.
Regularly sharpen the knife on a whetstone, but remember that Japanese knives have a different edge angle and require special and finer whetstones. Use a quality wooden cutting board. Store knives in a dry place to prevent steel oxidation. Do not use for chopping or cutting frozen products or bones. The blade may chip or break.
