Product detailed description

The Petty is a smaller kitchen knife, whose name comes from the French word petit (small). It has a similar profile to the chef's knife Gyuto - characterized by a high and flat heel and a slightly curved front edge of the blade, which transitions into a tip. It's easy to handle and often used for precise and accurate work. It is excellent as a versatile knife for peeling, slicing, dicing, crushing, or trimming smaller types of fruits, vegetables, herbs, sides, and proteins.

The Morinoki is a series of kitchen knives for everyday use, characterized by simple yet thoughtful design. The stainless steel blades offer durability and easy maintenance. Knives from this series are lightweight, functional, and have a distinctive shape. Special attention has been given to the original square handles made of Japanese zelkova, giving the knives a pleasant rustic appearance. This series is ideal for chefs of all levels seeking a reliable knife that doesn't require too much pampering. Shizu Hamono

Shizu Hamono is a family company founded in 1980 that follows a rich tradition of cutlery craftsmanship in the city of Seki in Gifu Prefecture, Japan. Proud of its heritage, its name is inspired by master craftsman Saburo Sizu from the Edo period. Shizu is committed to producing knives that meet the highest standards of quality and craftsmanship. Their original series Yuri, Yamato, and Morinoki are designed with an emphasis on ease of use and comfort at work. They put great effort into production and believe that their knives help people enjoy cooking to the fullest.

Material

The blade is made of DSR1k6 stainless steel, and the handle is made of Zelkova wood - Japanese elm.

Note: The knife is delivered in an original carton box.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves:
Wash the knives by hand. Wipe with a dry cloth. Avoid the dishwasher which can damage the edge.
Keep the blade clean and dry after use. To restore appearance, the blade and handle can be coated with oil - preferably linseed or camellia oil.
Store knives in a dry place to prevent steel oxidation. Do not use for cutting or chopping frozen products or bones. The blade may chip or break.

Shizu Hamono je japonská značka nožů, která vychází z staleté kovářské tradice města Seki, známého jako „Město mečů“. Přestože byla společnost oficiálně založena v roce 1980, její zakladatel Masami Horibe začal s výrobou nožů již v roce 1959 - čímž pokračoval v odkazu řemeslného mistrovství sahajícího více než 700 let do minulosti. Název „Shizu“ vzdává hold legendárnímu mečíři Saburo Shizu a uctívá tak historické a řemeslné dědictví tohoto regionu.
