Product detailed description

Ban Nou, translated as “knife of ten thousand abilities,” is a versatile kitchen knife that, like the Santoku, can handle almost any task you assign it. With a single knife, you can prepare an entire meal from start to finish, across a wide range of dishes. This model from Shizu Hamono is an ideal helper for everyday cooking, thanks to its lightness and compact dimensions, making it excellent for slicing onions, herbs, and boning smaller portions of meat.

Morinoki is a line of kitchen knives for everyday use, known for its simple yet thoughtful design. The stainless steel blades offer durability and easy maintenance. Knives from this series are lightweight, functional, and have a distinctive shape. Special attention was given to the unique square handles made of Japanese elm, which give the knives a pleasant, rustic look. This line is ideal for chefs of all levels who are looking for a reliable knife that doesn’t require much pampering. Shizu Hamono

Shizu Hamono is a family company founded in 1980, continuing the rich tradition of knife-making craftsmanship in the city of Seki in Gifu Prefecture, Japan. Proud of their heritage, they bear a name inspired by the master craftsman Saburo Sizu from the Edo period. At Shizu, they are committed to producing knives that meet the highest standards of quality and craftsmanship. Their original series Yuri, Yamato, and Morinoki are designed with an emphasis on ease of use and comfort during work. They put great effort into manufacturing and believe that their knives help people enjoy cooking to the fullest.

Material

The blade is made of stainless steel DSR1k6, the handle is made of Zelkova wood - Japanese elm. 

Note: The knife is delivered in an original cardboard box. 

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves:
Wash knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can cause damage to the edge.
Keep the blade clean and dry after use. To restore appearance, both the blade and the handle can be oiled - ideally with linseed or camellia oil.
Store knives in a dry place to prevent oxidation of the steel. Do not use for cutting or chopping frozen products or bones. The blade may chip or break.

Shizu Hamono je japonská značka nožů, která vychází z staleté kovářské tradice města Seki, známého jako „Město mečů“. Přestože byla společnost oficiálně založena v roce 1980, její zakladatel Masami Horibe začal s výrobou nožů již v roce 1959 - čímž pokračoval v odkazu řemeslného mistrovství sahajícího více než 700 let do minulosti. Název „Shizu“ vzdává hold legendárnímu mečíři Saburo Shizu a uctívá tak historické a řemeslné dědictví tohoto regionu.
