Nancy Singleton Hachisu, originally from California, has lived in Japan since 1988, where she married a farmer and settled in the countryside. Her deep understanding of Japanese culture and cuisine is reflected in this book, which took three years to create. During this time, she collected recipes from local cooks, including Zen nun Harumi Kawaguchi and home cook Teiko Watanabe. The book is not only a collection of recipes but also a guide to Japanese culinary history and philosophy. It also includes a glossary of ingredients, tools, and kitchen terms, which makes orientation easier even for beginners.

Nancy Singleton Hachisu is a native Californian who has been living with her husband, a Japanese farmer, in Saitama Prefecture since 1988. She is the author of four books, including Japan: The Cookbook, and has written for magazines such as The Art of Eating, Lucky Peach, Saveur, Food & Wine, Travel & Leisure, National Geographic Food, and BBC Travel. Hachisu also contributed to the "Salt" episode of Netflix's series - Salt Fat Acid Heat.
