Japan: The Vegetarian Cookbook – Nancy Singleton Hachisu

Japanese cuisine has a long tradition of working with vegetables, tofu, seaweed, mushrooms and other plant-based ingredients. In Japan: The Vegetarian Cookbook, Nancy Singleton Hachisu has collected more than 250 recipes that present this aspect of Japanese cooking in all its breadth. The recipes are not divided by course, but by method of preparation – from seasoned and vinegared dishes through frying, braising and steaming to grilling, pickling and sweet dishes. Alongside the recipes themselves, the author explains the ingredients and techniques used, as well as their place in Japanese cuisine.

What you will find in the book

More than 250 vegetarian recipes from Japanese cuisine. Recipes organized by method of preparation – seasoned, vinegared, fried, braised, steamed, sautéed, grilled, pickled and sweet. Information about Japanese ingredients, cooking techniques, culture and traditions associated with individual dishes.

Why we chose it

Japan: The Vegetarian Cookbook presents Japanese cuisine from a slightly different perspective than books focused on sushi, ramen or meat. The focus is on vegetables, tofu, mushrooms, seaweed and the way they are used in Japan. We also enjoy the organization by cooking technique. The book is therefore more than just a collection of individual recipes; it is a guide to the various ways of working with ingredients.
