Traditional Japanese Knife Yanagiba SHIRONIKO by Sakai Kikumori

The Yanagiba SHIRONIKO by Sakai Kikumori is a handcrafted knife with a single-edged blade, specially designed for slicing fishand meat. Yanagiba, meaning “willow leaf”, features a thin and long blade with a sharp tip and reinforced spine. The weight of the spine when slicing meat ensures downward pressure, leading to less friction and tearing. As a result, the ingredient retains its shine and taste. The inner side of the blade is not merely flattened - it is slightly concave, providing unique non-stick properties. The extra-long blade is ideal for slicing in one stroke and, besides filleting fish and removing its skin, it is also suitable for portioning other types of meat, such as beef roast or ribs. The SHIRONIKO model features a blade made of carbon steelShirogami White #2, with a Ni-Mai two-layer construction. The D-shaped handle is made of magnolia wood and finished with a buffalo horn end. Material

The blade is made of Japanese carbon steel Shirogami White #2, with a Ni-Mai two-layer construction. Shirogami White Steel is a carbon steel with just a very small amount of impurities. Forging can achieve an exceptionally sharp blade that is also easy to sharpen. The blade has a polished surface finish Migaki.
The traditional D-shaped handle is made of magnolia and finished with a buffalo horn end.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves:
Wash the knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge.
Steel with a higher carbon content offers long-lasting sharpness but requires more care compared to stainless steel. The knife needs to be regularly oiled, preferably even before the first use. Keep the carbon steel blade clean and dry after use. After cleaning, apply a thin layer of oil - preferably linseed or camellia.
Do not use the knife for prying, cutting, or chopping frozen foods or hard materials such as bones, squash, and similar, as the blade may chip or break.
Use a quality wooden cutting board. Store knives in a dry place to prevent oxidation of the steel.
The single-edged knife requires specific sharpening and experience with this type of blade.
