Traditional Japanese Knife Yanagiba SHIRONIKO by Sakai Kikumori

Yanagiba SHIRONIKO by Sakai Kikumori is a hand-forged knife with a single-edged blade, specifically designed for slicing fish and meat. Yanagiba, translated as "willow leaf," features a thin and long blade with a sharp tip and a reinforced spine. The spine's weight during meat slicing provides downward pressure, leading to less friction and tearing. This helps the ingredient retain its shine and flavor. The inner side of the blade is not just flattened - it is slightly concave, providing unique non-stick properties. The extra long blade is ideal for slicing with a single stroke and, in addition to filleting fish and removing their skin, it is also well-suited for portioning other types of meat, such as beef roasts or ribs. The SHIRONIKO model features a blade made from Shirogami White #2 carbon steel, with a Ni-Mai two-layer construction. The D-shaped handle is made from magnolia and finished with a buffalo horn end cap. For professional and experienced home chefs.

Material

The blade is made from Shirogami White #2 carbon steel, with a Ni-Mai two-layer construction. Shirogami White Steel is a carbon steel with only a very small amount of impurities. Forging can achieve an exceptionally sharp blade that is also easy to sharpen. The blade has a polished Migaki finish.
The traditional D-shaped handle is made from magnolia and finished with a buffalo horn end cap.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves:
Wash knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge.
High carbon steel offers long-lasting sharpness but requires more care than stainless steel. The knife needs to be oiled periodically, ideally before first use. Keep carbon steel blades clean and dry after use. After cleaning, apply a thin layer of oil - preferably linseed or camellia.
Do not use the knife for prying, slicing or chopping frozen products or hard materials like bones, pumpkin, and similar. The blade can chip or break.
Use a quality wooden cutting board. Store knives in a dry place to prevent steel oxidation.
A single-bevel knife requires specific sharpening and experience with this type of blade.
