Petty Tsuchime Kitchen Knife by Hanuljak knives

A smaller kitchen knife by Czech knife makers Hanuljak knives featuring a stainless steel blade and an ebony handle. The Tsuchime technique is applied to the blade, which the Hanuljak brothers create using their own stamps. It is handcrafted, making each blade unique. Petty is a type of Japanese knife, its name comes from the French word „Petit“, meaning small. It is easy to handle and is often used for precise and accurate work. The knife is ideal for peeling, coring, decorating, carving, removing potato eyes, etc.

Manufacturer

Behind the Hanuljak knives brand are brothers Kamil and Michal Hanuljak, who handcraft original kitchen knives in their forge in Prague's Hloubětín. They are inspired by ancient Japanese knife-makers and their production methods, which they combine with their own. Their knives have a distinctive appearance and functional properties, making them popular with professional chefs and cooking enthusiasts alike.

Material

The blade is made from AEB-L stainless steel. This steel offers excellent corrosion resistance, extraordinary toughness, and is easy to sharpen. It is ideal for humid conditions. The blade has a Tsuchime finish and is hand-forged. A specific relief is created on the blade using stamps. The blade surface is then polished by hand to a high gloss.
The handle is made from Macassar ebony.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are some must-haves:
Wash the knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge.
The blade of this knife is made of stainless steel and therefore does not require much care. Nonetheless, it is important to keep the blade clean and dry after use. To restore the appearance, you can oil both the blade and handle - preferably with flaxseed or camellia oil.
Do not use the knife for prying, cutting, or chopping frozen products or hard materials like bones, pumpkins, and similar. The blade may chip or break.
Use a quality wooden cutting board for chopping. Store knives in a dry place to prevent oxidation of the steel.

Ctí základní materiály, proto na začátku všeho jsou vždy vysokouhlíkové oceli a oceli s dalšími zušlechťujícími legurami, které dále sami zpracovávájí. Tak u nich vzniká mimo jiné i jejich vlastní damašková ocel.
