The Japanese knife Gyuto NDH by Sakai Kikumori is hand-forged in the city of Sakai. This kitchen tool stands out with its amazing sharpness, cultivated by the finest craftsmen throughout the entire manufacturing process, from forging to honing. The Gyuto is a universal knife for both professional and home use. It is the Japanese equivalent of the Western chef's knife, with a long blade and a classic, symmetrical profile. It is ideal for cutting meat, fish, vegetables, and herbs. Its length allows for long strokes when slicing meat while the rounded edge is suitable for the rocking technique. The NDH model has a blade made of stainless steelAUS-10 with Damascus cladding. The Damascus pattern along with the hand-hammered Tsuchime finish give the knife an unmistakable appearance.

Material

The blade core is made of Japanese stainless steel AUS-10 with increased carbon content. A significant amount of this element ensures easy sharpening and a hardness of 58-60 HRC. AUS-10 has great edge retention, toughness, resistance to corrosion, and wear. Knives made from this steel sharpen well and achieve excellent sharpness. The core is clad in Damascus, consisting of several layers of different types of steel that create a visually striking pattern. The blade also features a Tsuchime finish, which is hand-hammered using stamps.
The traditional octagonal handle is made from oak wood.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves: Wash the knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge. The blade of this knife is made from stainless steel and therefore does not require as much care. Still, it is important to keep the blade clean and dry after use. To restore appearance, the blade and handle can be oiled - preferably with linseed or camellia oil.
Regularly sharpen the knife with a whetstone, but remember that Japanese knives have a different sharpening angle and therefore require special and finer stones. You can use a Japanese whetstone KING or Suehiro. Use a quality wooden cutting board. Store knives in a dry place to prevent oxidation of the steel. Do not use for cutting or chopping frozen items or bones. The blade can chip or break.
