Traditional Japanese Knife Deba SHIRONIKO 165 by Sakai Kikumori

The Deba SHIRONIKO by Sakai Kikumori is a traditional hand-forged knife with a single-edged blade, specifically designed for filleting fish and cutting boneless meat. It is a heavy, robust, and sturdy knife with a wide blade, reinforced spine, and pointed tip. It is primarily used for processing whole fish - portioning, separating the head, and filleting, including cutting through smaller bones. The single-edged blade is always adapted exclusively for the right or left hand and guides the user to learn how to handle the knife correctly, both for cutting and sharpening. The reward is its uncompromising sharpness. The SHIRONIKO model has a blade made of Shirogami White #2 carbon steel, with a two-layer Ni-Mai construction. The oval handle is made of magnolia and finished with a buffalo horn end. For professional and experienced home chefs.

Material

The blade is made of Shirogami White #2 carbon steel, with a two-layer Ni-Mai construction. Shirogami White Steel is carbon steel with very few impurities. Forging can achieve an exceptionally sharp blade that is also easy to sharpen. The blade has a polished Migaki finish.
The traditional oval handle is made of magnolia and finished with a buffalo horn end.

Maintenance

To keep your Japanese knives in perfect condition, here are some must-haves:
Store knives in a dry place to prevent oxidation of the steel.
Wash knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can damage the edge.
Steel with a higher carbon content offers long-lasting sharpness but requires more care than stainless steel. The knife needs to be regularly oiled, preferably before first use. Keep the carbon steel blade clean and dry after use. After cleaning, apply a thin layer of oil - preferably linseed or camellia oil.
Do not use the knife for prying, cutting, or chopping frozen products or hard materials such as bones, pumpkins, and similar. The blade can chip or break.
Use a quality wooden cutting board.
A single-edged knife requires specific sharpening and experience with this type of blade.
