About the authors

Nicolai and Eva Tram are a Danish-Swedish married couple behind the acclaimed Knystaforsen restaurant in southern Sweden, which has been awarded a Michelin star. Nicolai is a chef with many years of experience at leading Scandinavian establishments, while Eva is a food journalist and sommelier. Together, they left their life in Copenhagen to create a restaurant concept where all dishes are prepared exclusively over an open fire using local ingredients.
