Product detailed description

This bread knife from the Shizu Hamono workshop was specially designed for slicing bread with minimal crumbs. The blade combines two types of serrated edges – a finer, sharper serration at the tip serves for easy cutting through a hard, crispy crust, while coarser serration closer to the handle is ideal for slicing the soft center. Thanks to this design, the knife creates clean cuts and beautifully thin slices with minimal crumbing.

Morinoki is a range of kitchen knives for everyday use, characterized by a simple yet thoughtful design. Stainless steel blades offer durability and easy maintenance. Knives from this series are clean, lightweight, and uniquely shaped. Special attention was paid to the original square handles made from Japanese elm, which give the knives a pleasant, rustic appearance. Shizu Hamono

Shizu Hamono is a family company founded in 1980, continuing the rich tradition of knife-making in the city of Seki in Japan's Gifu Prefecture. Proud of their heritage, they bear a name inspired by the master craftsman Saburo Sizu from the Edo period. At Shizu, they are committed to producing knives that meet the highest standards of quality and craftsmanship. Their original series Yuri, Yamato, and Morinoki are designed with a focus on ease of use and comfort in work. They put great effort into their production and believe that their knives help people fully enjoy cooking.

Material

The blade is made of DSR1k6 stainless steel, the handle is made of Zelkova wood – Japanese elm. 

Note: The knife is delivered in an original cardboard box. 

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves:
Wash knives by hand. Wipe with a dry cloth. Avoid the dishwasher, which can cause damage to the edge.
Keep the blade clean and dry after use. To restore the look, you can coat the blade and handle with oil – preferably linseed or camellia oil.
Store knives in a dry place to prevent steel oxidation. Do not use for slicing or chopping frozen products or bones. The blade can chip or break.

Shizu Hamono je japonská značka nožů, která vychází z staleté kovářské tradice města Seki, známého jako „Město mečů“. Přestože byla společnost oficiálně založena v roce 1980, její zakladatel Masami Horibe začal s výrobou nožů již v roce 1959 - čímž pokračoval v odkazu řemeslného mistrovství sahajícího více než 700 let do minulosti. Název „Shizu“ vzdává hold legendárnímu mečíři Saburo Shizu a uctívá tak historické a řemeslné dědictví tohoto regionu.
