Ceramic Sharpening Steel by Pallarés Solsona

The medium-coarse ceramic sharpening steel is ideal for regular knife maintenance between sharpenings. It has an ergonomically shaped plastic handle for a comfortable grip and a metal ring for easy hanging. The steel is used for honing, which is the fine alignment of the edge. It straightens it back to the center, extending its sharpness without removing a significant amount of material. Thanks to the gentle abrasiveness of ceramics, it removes only a minimal layer of steel, allowing for regular use ideally every week, thus postponing the need for sharpening on a stone or grinder. The ceramic sharpening steel is suitable for Western knives with a hardness of 54–58 HRC, where it helps maintain sharpness for a longer period. It can also be used for Japanese knives with higher hardness (60+ HRC).

Ceramic, polypropylene handle, and metal ring. 

Maintenance

The steel is made from a single piece of ceramic and can shatter if dropped. Do not wash it in the dishwasher, remove small metal particles after sharpening using a sponge under running water. Baking soda on a sponge can be used, but detergent is not recommended. After washing, dry the steel thoroughly and store it in a safe place. 

Usage

1. Place the tip at the end of the steel on a stable and degreased surface. Press downwards to prevent slipping during use.
2. With a free motion (without applying pressure), under an angle of approximately 20 degrees (Western knives), repeatedly slide the knife's bevel across the steel's surface. Sharpen the knife from heel to tip and repeat 5-6 times on one side of the edge.
3. After using the steel, gently rinse and dry the knife. This removes any microscopic metal particles that may have been released during honing.
