The Japanese knife Yuri Petty from Shizu Hamono is an elegant and precisely crafted kitchen tool. It excels in its lightness and offers easy and comfortable use. This is achieved thanks to the sharp and thin blade made of stainless steel and the comfortable oval handle made of stabilized wood, which is polished to a velvety smooth finish. Petty is a smaller kitchen knife, whose name comes from the French word petit (small). It has a similar profile to the Gyuto chef's knife - it is characterized by a high and flat heel and a slightly curved front edge of the blade that transitions into the tip. It is easy to handle and is often used for precise and accurate work. It is excellent as a versatile knife for peeling, slicing, dicing, crushing, or trimming smaller types of fruit, vegetables, herbs, garnishes, and proteins. It is ideal for those with smaller workspaces, who want a knife for quick use, or who have smaller hands and prefer a lighter alternative to the classic Gyuto knife. The Yuri series, designed by a female team of the brand, focuses on light and thin knives that are ideal for everyday use in the kitchen. Knives from this series have the thinnest blades in the entire Shizu Hamono catalog and allow for sharp and precise cuts with minimal effort.

Shizu Hamono is a family company founded in 1980, which continues the rich tradition of knife-making craftsmanship in the city of Seki in the Japanese prefecture of Gifu. Proud of its heritage, it bears a name inspired by the master craftsman Saburo Sizu from the Edo period. At Shizu, they are committed to producing knives that meet the highest standards of quality and craftsmanship. Their original Yuri, Yamato, and Morinoki series are designed with an emphasis on ease of use and comfort during work. They put great effort into production and believe that their knives help people enjoy cooking to the fullest.

Material

The blade is made of stainless steel with a higher carbon content AUS-8, coated with two layers of stainless steel SUS1A-1, and is crafted using the San-mai technique. Japanese steel AUS-8 is strong, durable, and easy to sharpen.
The handle is made of stabilized Pakkawood – a composite material made of layers of wood impregnated with resin and subsequently pressed under high pressure. Pakkawood is highly resistant to heat, moisture, warping, and other common problems that can occur with natural hardwood.

Note: The knife is delivered in a beautiful box made of paulownia wood.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are some must-haves: Wash knives by hand. Wipe with a dry cloth. Avoid using a dishwasher, which can damage the edge.

The blade of this knife is made of stainless steel and thus requires less care. However, it is important to keep the blade clean and dry after use. To restore its appearance, the blade and handle can be oiled - preferably with linseed or camellia oil.

Regularly sharpen the knife on a whetstone, but remember that Japanese knives have a different edge angle and therefore require special and finer whetstones. Use a quality wooden cutting board. Store knives in a dry place to prevent oxidation of the steel. Do not use for cutting or chopping frozen products or bones. The blade may chip or break.
