The Japanese Nakiri HCD knife from Sakai Kikumori is a hand-forged kitchen tool known for its unique blade. It originates from one of Japan's most renowned blacksmithing regions - Sakai, located in the heart of Osaka. The Nakiri is a knife specialized for cutting fruits and vegetables, ideal for clean and even slices. The wide blade easily penetrates even dense vegetables and also serves as a practical scoop for transferring sliced ingredients. It has a characteristic rectangular shape with straight edge and flat profile, which is appreciated by chefs who approach cooking with care and precision. The HCD model is equipped with a blade made from stainless steel 440C with a damascus cladding and hand-hammered Tsuchime finish.

Material

The blade is made of stainless steel 440C with high carbon content. After heat treatment, it can reach a hardness of 58–60 HRC, ensuring excellent sharpness. It is highly resistant to corrosion and wear and maintains its edge relatively long. Proper heat treatment also increases its toughness, making knives from this steel very strong and durable.
The handle is made of oak wood.

Maintenance

If you want to keep your Japanese knives in perfect condition, here are a few must-haves:
Wash knives by hand. Wipe with a dry cloth. Avoid dishwashers as they may damage the edge.
The blade of this knife is made of stainless steel and therefore requires less care. However, it is important to keep the blade clean and dry after use. To restore appearance, the blade and handle can be coated with oil - preferably linseed or camellia.
Do not use the knife for prying, cutting, or chopping frozen products or hard materials such as bones, pumpkins, and the like. The blade may chip or break.
Use a quality wooden cutting board. Store knives in a dry place to prevent steel oxidation.
