Detailed information

Product detailed description

Kiridashi Knife from Blue Paper Steel

The Kiridashi is an iconic Japanese utility knife, known for its simplicity, precision, and functionality. In Japanese, it means "to cut" or "to mark," which perfectly describes its use—from wood carving and leatherworking to paper cutting and other detailed tasks. Thanks to its shape and balance, it offers exceptional control over the cut even in delicate work. This model was created in the city of Miki, the cradle of Japanese cutlery, under the Ikeuchi Hamono brand, whose history dates back to 1953. The founder, Ikeuchi Shozo, a native of Miki and a passionate cutler, began building the brand at the age of 21, which eventually became synonymous with quality and precision. The Kiridashi is made using the traditional method of combining hard steel and soft metal, similar to Japanese swords. The blade made of Blue Paper Steel ensures extreme sharpness and long blade life, while the soft layer of historic steel Kamaji (from the Meiji period) increases toughness and ease of sharpening.

Material

Kiridashi knives are made by combining hard steel and soft metal, similar to the production of Japanese swords. Blue Paper Steel is highly valued for its excellent hardness, sharpness, and ability to maintain its edge. The soft layer of the knife is made from Kamaji steel dating from the Meiji period (1868–1912).

Maintenance

The Kiridashi is made of high-carbon steel, which provides exceptional sharpness and long blade life. However, this material requires basic care—clean the knife thoroughly after each use, keep it dry, and regularly treat it with oil according to the frequency of use, for example, camellia oil. After applying the oil, let the knife dry and then wipe it dry.
