Product detailed description

The Gokumyo GS series of whetstones represent stones suitable for regular and everyday maintenance of knives and other tools. These are high-quality and easy-to-use stones with a universal range of grit. The stones are characterized by a solid and smooth structure that hardly discolors or wears down. Gokumyo stones have excellent sharpening performance and smooth feedback. Initially, it might seem to you that you are sharpening with a higher grit than you expected. The high density of the whetstone offers not only sharpening speed but also slow consumption of the stone, thus ensuring long life. 

Working procedure:
This well-processed sharpening stone has a dense concentration of very fine air pockets and can be used immediately after light moisten.
1. Before use, either briefly immerse the sharpening stone in water or moisten its surface with your hand and then begin sharpening.
2. Before sharpening, the stone must be secured, ideally in a non-slip holder.
3. Sharpen the selected tool on the stone, maintaining the correct angle of the sharpened tool.
4. Wash and dry the tool.
5. To preserve the stone's ability to sharpen, clean the sharpening stone with water and restore its surface after each use with a conditioning stone included in the package.
6. Dry the stone with a paper towel and air-dry it completely before storing. 

The stones are marked with a JIS number (Japanese classification for grit). The lower the number, the coarser the stone. Variants:
The stones from the Gokumyo GS series are medium grit stones suitable for regular sharpening and can be used for various knives—from stainless steel knives to carbon blades. They can also sharpen carpenter, woodworking, and other tools.

#600 (Medium Whetstone grit): Grit 600 is very versatile and sharpens somewhat faster than finer "medium grit" stones (1000, 1200, 1500). It is thus excellent for repairing dull and slightly damaged blades.
#1000 (Pre-final Medium Whetstone grit): Grit 1000 is a great universal grit, ideal for everyday sharpening and also for anyone just learning to sharpen blades.
#1500 (Finishing Whetstone grit): Grit 1500 is ideal for regular sharpening and maintenance of knives that are already in good condition.

Suehiro

Suehiro is a renowned Japanese brand specializing in the production of synthetic whetstones. The company was founded by Kenkichi Okumura in 1967 and is based in the Niigata region. Suehiro made a name by studying natural whetstones and developing synthetic alternatives that not only achieve the performance of natural stones but in some cases even surpass them.

Note: Included in the package is a small diamond stone #1000 for maintaining the surface of the whetstone after each use. 

Maintenance

To keep the whetstone in the best condition, it must be regularly cleaned, thoroughly dried before storage, the irregularities need to be leveled continuously, and it must be properly stored. Store the whetstone in a place where it cannot be damaged. Since it is dense and porous, impacts can destroy the whetstone, and the same applies to dropping it. All water stones also need to be regularly flattened. For regular maintenance, the included small diamond stone can be used. For more thorough flattening, we recommend purchasing a larger flattening stone.
